Wasabi ‘Mazuma’ is a traditional Japanese wasabi cultivar prized for its high-quality rhizome, strong wasabi flavour and good storage ability. Mazuma is one of the recognised cultivars of true Japanese wasabi.
⭐ Main features
Mazuma was developed in Shizuoka, Japan, and is traditionally associated with the Wakayama and Okutama areas. It is considered relatively more heat-tolerant than some Daruma types, although published evidence for the degree of heat tolerance is limited.
🌶️ Taste
Freshly grated Mazuma has the characteristic hot, pungent, aromatic wasabi flavour.
Unlike chilli, the heat is mainly experienced through the nose and sinuses, rather than producing the same burning sensation on the tongue. The pungency comes from isothiocyanate compounds released when the rhizome is damaged or grated.
Mazuma is particularly valued for its complex flavour rather than simply extreme heat.
🌴 Growing Mazuma in Perth
This is an excellent specialty plant for a Perth nursery, but it needs a very different environment from most edible plants.
☀️ Light
Avoid full Perth sun.
Give it:
Wasabi naturally grows in cool, moist environments, so Perth summer conditions can be challenging.
💧 Water
Keep the growing medium consistently moist but never stagnant or waterlogged.
A self-watering container or a well-drained potting mix can work very well.
The goal is:
Moist roots + excellent drainage + cool root zone.
🌱 Soil and planting
Use a rich, organic, free-draining medium.
A suitable container mix could include:
Don’t bury the crown deeply.
Plant so that the rhizome/crown remains close to the surface and has good airflow.
Containers are often easier than planting directly into Perth’s sandy soil, because you can control moisture, drainage and shade.
🌿 Fertiliser
Mazuma is not a plant that needs heavy feeding.
Use a mild, balanced slow-release fertiliser during active growth.
Avoid excessive fertiliser because salt accumulation and root problems can occur in continuously moist growing conditions.
A small amount of organic fertiliser or compost can also be beneficial.
✂️ Maintenance
Remove:
Don’t remove large numbers of healthy leaves unnecessarily because the plant needs its foliage to build the rhizome.
Mazuma can produce side shoots/offsets, which can eventually be separated for propagation.
🦠 Important disease warning
Mazuma has a reputation for being susceptible to soft rot and blackleg, so drainage and hygiene are extremely important.
Avoid:

🥢 Harvesting
The rhizome is the prized part.
For a home gardener, patience is essential. Wasabi is slow compared with normal herbs and vegetables. Depending on growing conditions and the desired rhizome size, harvesting can take roughly 18 months to several years.
The leaves, stems and flowers can also be eaten, making the plant useful as a whole edible plant.
